The partial barrel fermentation and extended lees contact have added complexity to the rich varietal flavour of this classic grape variety as it matured in custom made 450L French oak puncheons. This complexity will continue to develop for many years.
Tasting Note for 2017 Chardonnay
Straw in colour. There are magnificent ripe peaches on the bouquet, quite intense and with hints of toasty oak behind the fruit. Burgundian complexity. The palate is quite restrained with the modified fruit component showing the effects of barrel fermentation and lees ageing. The structure is quite European with a silky mouthfeel and “sucked pebble” minerality to the finish.
This is quite a complex wine and will show its best with food, something like a creamy chicken pie.
